Its <strong>origins<\/strong> are ancient as the first historical testimonies date back to the <em>1200 \u2013 1300 centuries<\/em> and are generally located in the Cistercian monasteries of <strong>Parma<\/strong> and Benedictine monasteries of\u00a0 <strong>Reggio Emilia<\/strong> in which was produced an hard cheese, obtained through the processing of milk in large boilers.<!--more--><br>\nOne of the most <strong>significant citation<\/strong> is in the <em>Decameron<\/em>, leaving no doubt that the Parmigiano, which Maso refers in describing the land of\u00a0 Bengodi, is exactly the same cheese that today is named Parmigiano Reggiano, \u201cthere was a mountain of grated Parmesan cheese, which was standing above the people\u201d.<br>\nIn a 1500 review of the \u201cDe re culinaria\u201d by Apicius,\u00a0 the author considers the Parmigiano Reggiano <strong>the best cheese of Italy<\/strong> along with another one of\u00a0 Etruria, called \u201cMarceolinus\u201d.<br>\nMany biographers report that <em>Moliere<\/em> before his death took a flake of Parmigiano Reggiano cheese.
