Semolina Pancakes

Running time: 1 hour 30 minutes

Ingredients:
1 lt milk
250 grams of durum wheat semolina
6 eggs
50 g sugar
100 gr flour 00
1 tablespoon rum
lemon peel
salt

Preparation: Boil the milk in a saucepan. Then pour the corn meal and salt and cook for 2-3 minutes until the dough is compact (stirring constantly). Let cool. Meanwhile, separate the yolks from the whites and incorporate the polenta along with the rum, the lemon peel grated, the flour and sugar. Mix well, until the mixture is well blended and add the egg whites. With a spoon collecting small pieces of dough into boiling oil to be paid. Fry a few pancakes at a time. At the end sprinkle with a little ‘sugar icing.
