farmhouse_il_BagolaroA little more than half an hour from the capital city, we find this wonderful farm, Farmhouse Il Bagolaro, which is described to us with familiarity and love by Ms. Valentina.

How did your business start?
Grandfather Sabino, the owner of these lands, in 2000 decided to renovate the company, obtaining housing from one of the buildings on the estate. Originally, these 35 hectares of land were planted with olive trees, so that the only activity in the beginning was the harvesting of the olives.

What kind of products do you produce?
Our main production is based for 98% on DOP SABINA oil, of which we follow closely the stages of production until the processing at our mill. We also have a beautiful vegetable garden and we breed pigs and sheep.

Do you prepare any special and particular products?
Yes, of course we do! We prepare vegetables pickled in oil, and all is done at home, because those are the vegetables from the garden and the oil is ours! We also produce chocolate with extra virgin olive oil, a real success!

You also have a Canning Laboratory. What’s this?
In this laboratory the process of transformation of the oil takes place, which then we store in nitrogen.

What points of interest can be found in your surroundings?
Our village, Nerola, a small and medieval centre with a castle! Then there is Farfa nearby, with the medieval abbey and excavations, and only 40 km away, Rome.
