taverna_di_bibbianoOn top of one of the beautiful hills surrounding San Gimignano lies the farmhouse Taverna di Bibbiano. The gentle Mrs. Martina describes us this delightful, well-maintained structure, surrounded by fields of lavender, roses and herbs.

How did this farmhouse originate?

It was born from the idea to offer our guests something different and original, compared to our competitors. In addition to cereal crops such as wheat, corn, sunflowers and oil, what distinguishes us is the cultivation of flowers and herbs of various kinds, for drying. Our strength is the lavender fields.

How do you use the lavender and herbs, once collected?

Mainly we let them dry, and then create floral arrangements, souvenirs or wedding favors. In fact, one of the services that we offer is the organization of weddings and baptisms. In addition we use a lot in the kitchen of our restaurant.

Do you prepare any dishes based on lavender?

Of course we do! In our restaurant you can taste the sliced beef with Chianti sauce and lavender or risotto with saffron from San Gimignano, pistachios and bacon. And all the pasta dishes are made of fresh home-made pasta such as tagliatelle or ravioli.

Do you offer any other services related to the production of lavender?

We organize tours in various languages at our fields of lavender. During the tour the characteristics of the plant and the cultivation of lavender are explained; the tour ends with a visit to our shop where the procedures for processing and drying are showed, and where our products are exposed.

And what routes are there around Taverna di Bibbiano?

Our farmhouse is located on Colle di Val d’Elsa, in the province of Siena, and it enjoys a breathtaking panoramic view. From our garden you can see beautiful San Gimignano, 5 minutes by car. In just 20 minutes you can reach Volterra.
