Casale Le Pergole is situated in the splendid scenery of the Florentine hills overlooking a vast valley with a breathtaking view stretched until Monte Falterona, the mountain which gives birth to Florence’s world-renown river, the Arno. Casale Le Pergole’s exclusive position, 300m above sea level and immersed in nature, allows the visitor to reach the centre of Florence in only 20 minutes along with all the art heritage cities in Tuscany. It is the ideal place for vacation particularly because of the culture, art and all the excursions that you can participate in during your stay. You will also find peace, relaxation, fine cuisine and good wine. The name of the farm recalls the ancient pergola that shades the front of the old farmhouse and makes it a perfect place for fresh relax during summertime. The 14th century farmhouse and its barn which have been restored with respect for the old structure, are surrounded by meadows, olive trees and fruit trees. Close by, there is a swimming pool enclosed by secular olive trees. The original rustic character has been maintained throughout the restructuring process with a special attention to details: some stone walls have been kept along with the chestnut beams and the old tiles. The ancient terracotta flooring has been recovered to tile most of the building. The outside areas have been paved with local stones in order to preserve the authentic environment of the country farmyard. The beautiful pool surrounded by centuries-old olive trees has been realized in respect of the environment. Beside the barn, under the loggia there is an ancient wood oven which is in perfect working condition where, during the summer season, we prepare delicious typical dishes which delight our guests’ palate. Pizza is the specialty of the farmhouse. Breakfast is provided for the guests on the ground floor or in the panoramic patio of the farmhouse. ll the products that we grow in our garden are used in the kitchen. Our aim is to use them to prepare delicious dishes, which are no only exquisite but are also healthy. The seasonal menu and his composition originates from the evolution of the agricultural production. We want to offer to our guests the possibility to taste authentic flavours which are often forgotten. Fine cuisine is strongly linked with raw material’s quality and for this reason we pay a lot of attention to that. Extra-Virging olive oil, spices and all the products that we use are producted by us. We propose many traditional dishes such as Pappa al pomodoro, Ribollita, Panzanella, Arista with potatoes, Florentine Crespelle, Peposo, Ravioli and Tortelli, Fettunta. Different kinds of Pecorino with our special sauces and Fiorentina steak upon request. The only exception in the tradition is our Pizza, cooked in the wood oven and prepared with special flours and long levitations, which is then seasoned with our products. And in conclusion our homemade desserts: Cantucci and Vin Santo, Cheesecake with apricot sauce, Jam tart, Seasonal fruit Bavarese, Mattonella, Chocolate cake and Tiramisù.
