The Vallecupa Riding Farm Holidays offers genuine home made food based on some typical dishes, prepared with tasty and genuine local products. Among the best dishes we suggest: the ”spaghetti alla chitarra”: a home made traditional pasta dish made of eggs and flour. Just to mention some others exquisite pasta dishes, you should taste the “lasagne abruzzesi “and the “caratelli with orapi”, a wild spinach that only grows at high altitude. Lamb or mutton is a typical main cours ecooked in a variety of ways such as: roasted, skewered, barbequed or braised with herbs in a special copper pan (caldano). Among the vegetables you can taste the pickled potatoes, seasoned with breadcrumbs, garlic and parsley, cheese and if you like, sausage and pizza made of potatoes and cooked in the oven with smoked cheese(scamorza) and pork products, of course local typical ones.
