I’m Cristiana, and I’m delighted to introduce you to my greatest challenge: Zè del Pino, where ancient tradition meets modern comfort: an oasis of tranquillity nestled within 70 hectares of woodland, in the most secluded part of the Ciocco complex, at an altitude of 1,070 metres in the heart of the Serchio Valley, in Tuscany, between the Apuan Alps and the Tuscan-Emilian Apennines. Prepare to be amazed!
Our cuisine is based on two fundamental principles: the use of high-quality ingredients (exclusively seasonal) and the revival of traditional recipes – and much more besides! At our farmhouse, you’ll experience the flavours and aromas of authentic local cuisine: fresh pasta, stuffed pasta, vegetable pie, soups and focaccia will be part of your stay.
At the “Zè” Restaurant, you can start your day with a hearty and varied breakfast buffet. In winter, breakfast is served in the charming, historic Enrico Hall, whilst during the summer months it is served outdoors on the beautiful terracotta patio with panoramic views. You can book lunch and/or dinner at the farmhouse; we offer a weekly set menu or à la carte options, based on the fresh, high-quality produce currently available.
In compiling our menus, we prioritise seasonal and local produce, typical of the Garfagnana’s food and wine tradition, which is transformed daily into delicious dishes. The use of fresh, high-quality produce is part of our philosophy.
The cuisine we offer is characterised by a varied gastronomy rooted in the traditional dishes of the Garfagnana and the Media Valle. There are truly many typical products and dishes from this area, with a long history and tradition. This is mainly due to the agricultural and mountain-based economy, which is reflected in a simple, authentic and hearty local cuisine, as in the past the pace of life left no time for preparing elaborate recipes. We prepare, for example, spelt soups, corn polenta and legume soups.
Here you’ll find all the best that a valley renowned for its Garfagnana IGP spelt, its DOP chestnut flour, its Bazzone ham (a Slow Food Presidium) and a hundred other products—including extra virgin olive oil and wine—has to offer.
You can discover Italy’s first beer made with spelt (a real treat), an excellent high-mountain cheese, a black pudding such as Biroldo (another Slow Food Presidium), Ottofile corn (an ancient variety with an incredible flavour), chestnut flour, honey, jams and mushrooms.
The ingredients used, all high-quality raw materials, come from our own crops and local farms.
The menu also includes vegetarian dishes and gluten-free or lactose-free options. We are also happy to cater for special dietary requirements at any time.
