Il Cicorietta Bistrot is our vegetarian restaurant. 40 seats inside in the fireplace room and 20 seats outside, under a wonderful white pergola overlooking the valley. Only zero-kilometer and organic ingredients, harvested in the morning from the vegetable garden, orchard, meadows or forest. We serve dishes of ancient local tradition and for this reason we choose flours and legumes of ancient varieties, such as Verna flour, Maiorca, Gentil Rosso, Senatore Cappelli, Purgatorio beans, Solco chickpeas… We use extra virgin olive oil both in cooking and raw. In some dishes instead we love to combine organic flavored oils and vinegars. We recently introduced jar cooking, sous-vide cooking and low-temperature cooking, which are modern methods that allow us to preserve the nutritional properties of food and maximum hygiene in preparation and storage. The true peculiarity of our restaurant is the use of wild herbs and flowers: dandelion, wild mustard, nettle, elderflower, acacia flowers, calendula, clematis, mallow, purslane… many wonderful, rare and surprising ingredients of inestimable value, so many new flavors for the palates of our generation, so much color and grace on the plates… Inside the agriturismo there is a restaurant specialized in vegetarian cuisine, which uses mainly organic products from its own vegetable garden or zero-kilometer products from neighboring farms. Vegetables are harvested daily from the garden, together with wild herbs that grow abundantly in the farm and that enrich the dishes with the scents and flavors of times past. Nourishing ourselves and nourishing you in a healthy and gratifying way is for us an essential aspect. We dedicate maximum attention and great care to all ingredients and their origin, which we always ensure is as natural and healthy as possible. We like to eat well, with taste, food is sacred to us!
