Borgo San Marco retains the original structure of the 17th-century Masseria: it has opened up to hospitality without distorting itself. It is a country hamlet with a late 15th-century fortress tower, an 18th-century church, orange groves enclosed by tufa stone, stables with drinking troughs converted into a lounge and reception, an old oil mill with a millstone in full view that has become a bar-library and a beautiful infinity pool, perfectly integrated into the Mediterranean maquis. Lime white and ochre yellow are the colours that characterise the exterior, in continuity with the chessboard of the Fasano fortress farms. This is how the Knights of St John wanted it, and this is how Alessandro Amati preserved it. His family bought it in the 17th century, turning it into a factory with an agricultural vocation. Even today, quality oil is still produced from the 13,000 olive trees.
