Description Borgo Di Sopra

Borgo di Sopra is the home of Azienda Agricola Corani in Castenedolo, with vineyards providing a stunning backdrop to the restaurant. Here white, red and sparkling wines are produced, along with cured meats, cheeses and traditional desserts; the agritourism's vegetable garden supplies seasonal produce. In the kitchen, chef Alessio Rovetta prepares agripizze using flours from Mulino Bresciano, a blend of type 2 and type 0 with wheat germ, and a long fermentation on biga: margherita with buffalo mozzarella, Casaro with three Brescia cheeses, Bresciana with caciotta, guanciale, Slow Food presidio honey and rosemary. The first courses follow the seasonality of Brescia products, often featuring house wine in the risottos. Open Friday and Saturday from 7pm to 11pm, it also hosts corporate dinners, reunions, class celebrations, baptisms and communions.

Typical Cuisine Compleanni Aziendali
The restaurant at Borgo di Sopra opens only Friday and Saturday evenings, from 7 PM to 11 PM, with the vineyards of the Corani agricultural estate providing a stunning backdrop to the dining room. In the kitchen, chef Alessio Rovetta follows Brescia's culinary traditions: tagliatelle with hare ragù De.Co., casoncelli with herbs, marinated pork ribs in beer and honey, beef tagliata. The agripizze are made from flour from Mulino Bresciano, a blend of type 0 and type 2 flour with wheat germ, biga and long fermentation: margherita with buffalo mozzarella and selected tomato, del Casaro with three Brescia cheeses, Bresciana with caciotta, guanciale, Slow Food honey and rosemary. The vegetables come from the agritourism's garden, according to the season. The cellar features white, red and sparkling wines of their own production, along with local cured meats, cheeses and desserts.
