Description Valle Rita

Borgo Valle Rita came back to life from the remains of Masseria Girifalco, a previous castrum built alla around a crenellated tower of Normans origins, dated XI century. For its strategic relevance and reachness of land, the feud belonged to several prominent families as Doria in the XVI century, marquis Alcanices and Royals of Spain from XVII to XIX century, when it was donated to Her Majesty Maria Cristina of Austria, the last landlord up to 1924. After this date, the about seven thousands hectare land was fractioned: one portion of the land is the actual estate of Valle Rita, whose name is due to the Rita torrent, which passes through all the valleys and hills of the property. Today the estate belongs to Lunati family, who, enchanted by the fascination of this hidden land, has devoted itself to restructure peasant houses and villas in the country, preserving their authenticity and original beauty. A glance of typical mediterranean colors, original ceramic floors, antiques furnishing and fresh fruits at your arrival: this is how villas and apartments in the Borgo present themselves to guests who search for peace and scent of jasmine or orange blossom. Each lodge is equipped with brick oldstyle kitchens and some of them feature also big fireplaces. Each apartment is different, each one is immersed in the green and conceived to offer the delightfull experience of country life, although with a complete set of comforts: air contitioning and heating, tv, fridge with welcome water or drinks, telephone, pohn, and for loger stays also crockery and babies ' facilities. Villas also enjoy their own external gazebo with sunchairs in the grass and they stand apart for the complete privacy they offert to country life lovers.

The restaurant is located in rooms once destined for tobacco pickers arriving from Salento. Legend has it that the beauty of Salento women attracted throngs of suitors arriving from Lucania to sing love serenades, willing to walk dozens of kilometers just to win their hearts. It is in this space between history and legend that the restaurant is found. We set a table for omnivores, but our strong bond with the land leads us to privilege exploration of the plant world in our cuisine as well. There is something for vegans, vegetarians, raw food enthusiasts and fruitarians. For those seeking the intimacy of a dinner or lunch to share for two. But also for those who want to meet here with loved ones to celebrate a special day together: a birthday, an anniversary, and of course the day of the "yes." For everyone there is plenty with special attention to those who must deal with food intolerances and allergies. In the restaurant at Borgo Valle Rita every choice responds to two absolute selection criteria: taste and health, that of our guests and that of mother nature.

The chef: memory and contemporaneity

The rest is done by our cook, Carmine Chiarelli, who recently turned 25. He bears the name of his paternal grandfather and was born in Acquaviva delle fonti, the city devoted to the fat, red and sweet onion and to its patron saint Sant'Eustachio. The chef's sentimental education is the fruit of the teachings of Michele Rotondo and Salvatore Amato, the cooks alongside whom he learned to select and manipulate raw materials without compromising their flavor and nutritional properties. His are clear dishes, laden with memory and illuminated by counterpoints of acidity but without intrusiveness, like him. Before arriving at work it can happen that he stops by his grandparents' vegetable garden, to steal fresh broad beans and dried figs, and perhaps a visit to the trusted baker in Laterza to plate the dessert dedicated to grandmother Elisa, with Borsci gel and vanilla and coffee ice cream on a thick slice of bread to be licked clean even though it comes last of ten dishes. The rest he draws directly from the immense estate of Borgo Valle Rita, a dwelling of profound quietness, authentic and genuine as only Puglia, sometimes.

Surroundings (Ginosa)

Relax, fun, exploration. And it's here, at the crossroads between Matera's Sassi, the ravines of Laterza, Ginosa and Massafra, the sea, and the trulli of Valle d'Itria, that the Girifalco estate was built in the fourteenth century. The heart of the property comprises the main farmhouse, named after the locality, and the guest rooms carved out from traditional rural dwellings arranged in parallel rows flanking two lines of palm trees: the walkway that welcomes you to the Borgo.
