At Escaia, in the Ulignano locality, the organic farm stretches across one hundred thirty hectares of rolling hills and woodland near Volterra. The apartments occupy the farm's original stone houses and are open from March to October. There is a swimming pool. A stream runs through the property, and a short distance away you can climb a small wooded hilltop. The most famous Tuscan towns are about an hour's drive away. The kitchen follows the garden's calendar: in spring wild asparagus foraged in the woods becomes a frittata with homegrown onions, in summer organic vegetables grown on-site arrive, in autumn mushrooms found during walks. In winter the family harvests olives and produces oil from them. Guests can cook in their apartment or dine in the surrounding area.
