The kitchen at Acetaia La Vedetta is built around Aceto Balsamico di Modena IGP produced in-house, aged in the family's barrels since acquiring the estate in 1990 and expanding it to ten hectares, seven devoted to hillside vineyards. Hand-rolled fresh pasta, slowly simmered sauces, meat and vegetables from the garden. Dishes follow the seasons, yet classic Modenese specialties remain permanent fixtures on the menu, prepared from family recipes. The table is also graced with the estate's wines, including a Rosé Brut. The dining room windows overlook the rolling hills and vineyard rows that surround the house.
