In the heart of Cassano delle Murge, at the gateway to the Alta Murgia National Park, Agriturismo Ciriè’s restaurant showcases Apulia through short-supply-chain ingredients and honest cooking. House appetizers feature fresh dairy (burrata, braided mozzarella), seasonal vegetables, and Coratina extra-virgin olive oil, served with Altamura PDO bread. Signature first courses include orecchiette with turnip tops and cavatelli with Murgian ragù. From the grill: bombette, knife-cut sausage, and selected cuts; in season, oven-baked lamb with potatoes and lampascioni. Desserts follow tradition—sporcamuss, homemade tarts, and (at Christmas) cartellate with vincotto.
